Birthday Month is a wrap!
I will be honest, before the month had even begun I was not feeling very grateful. In fact, I was experiencing kind of a low point and wondering if somewhere somehow after all of life’s knocks I was beginning to no longer be able to call myself an “optimist”.
I think that pain and suffering and sadness should be as real in our day to day lives as happiness and joy. In a culture where one feeling is more socially acceptable than another, there is very little support out in the open for when we’re not feeling our best and thinking of something to be thankful for everyday often took work and contemplation. Still, going over this list made me realize there really are beautiful things in life - you just have to keep your eyes open for them and try your best to see them everyday even if that’s hard.
Without further ado, here’s a list of all the things I was thankful for in August 2014.
I AM THANKFUL FOR: 1) Having Shrampersand for a pet2) Mace & Trevor3) (Travel Day) Ran into Sheldon4) Family5) New Beginnings6) Night fishing with family on the beach where I learned how to drive7) All the random adventures in my life8) Ghostie9) Kind weather and pineapples10) Anna & Joceyln 11) Friends to whom I owe a huge debt, gifting me more than I deserve12) Where I am in this moment & lovely folks in my life today13) The Perseid Meteor Shower and an orange moonrise14) Never having to eat Taco Bell on vacation15) My go to cure all: HUGS16) What music does to heal the world 17) A great vacation (and finally getting my suitcase packed)18) Betty: Nearly 90, A “Kapuna” in Hula, & Friends with The Beach Boys.19) My imperfection & willingness to learn/seek improvement20) The ability to make people smile today and everyday21) All the many kinds of love22) Every moment I get to have in this impermanent life23) Bear Grylls24) Kindness, generosity, listening ears, shoulders to lean on 25) Who listen if I speak, love me if I falter, & in the dark keep a light on26) Bellshine who gives me so many hugs27) My love of music, my silliness, wandering, endless imagination28) Friends who’ve always been there & never let me down29) Solvitur Ambulando & SLEEP (I was not well) 30) Hurray for the Riff Raff gets to play Hardly Strictly Bluegrass this year31) Not giving up on myself, on life, or on the goodness of people

The mystery has been solved thanks to some friends on how to recreate a delicious dessert I enjoyed whilst in Norwich, England a few years back.

And now for all of us to enjoy!

"Looks unbaked due to crystal formations, which would have melted otherwise. Pave is my guess, like a ganache but different proportions. Top is likely a White chocolate version of below formula with maybe some double cream whisked in before molding, giving it a ‘cheesy’ acidity without tasting like cream cheese. It also looks a little over folded.”

Formula below.
CHOCOLATE PAVE
2.5 cups cream
1/4 cup liqueur of your choice (Grand Marnier, Baileys, etc.)
16 oz. chopped bittersweet chocolate (at least 70% cocoa)

Heat cream and liqueur in pot over medium heat
Place chopped chocolate in large bowl. Spray molds with non-stick cooking spray
When cream is almost to a boil, pour over chopped chocolate and whisk together
Pour into molds and freeze, about 20 minutes or until hard. Unmold frozen.
Serve at room temp with seasonal fresh fruit or coulis of your choice.”

To break it down, the above recipe I believe was meant for more of the top of the dessert, but with white chocolate obviously. I’d go with this recipe for the actual cake part, but gently fold in some white chocolate chips before transferring to the pan to bake.
Chocolate Pavé
Serves 9-12
Adapted from Room for Dessert

4 ounces bittersweet chocolate, roughly chopped
4 ounces unsweetened chocolate, roughly chopped
1/2 pound butter, cut into 1-inch cubes
6 eggs separated, at room temperature
1/2 cup plus 1/2 cup sugar

Preheat oven to 350. Butter an 8-by-8-by-2-inch square cake pan and dust with cocoa powder. Line bottom of pan with parchment paper. Put chocolate and butter in a bowl set over a pan of simmering water, stirring occasionally until chocolate has melted completely. Whip egg yolks with 1/2 cup sugar until they lighten and form a ribbon. Stir in melted chocolate mixture. In a large mixing bowl, whisk egg whites slowly until frothy. Once they form soft, wet peaks, gradually beat in remaining 1/2 cup sugar until whites form wet shiny peaks that hold their shape. Fold egg whites into chocolate mixture. Transfer batter to prepared cake pan. Bake for 35 minutes. Cool for 15 minutes.”
